From Domaines Baron de Rothschild (Lafite)
Ingredients for 4 persons
16 chicken wings
1 tablespoon soy sauce
2 tablespoons maple syrup
1 tablespoon olive oil
Juice of 1 orange
Juice of 1 lemon
1 clove garlic
Preparation time: 30 minutes | Cooking time: 15 minutes | Marinade: 2 hours
The recipe :
Peel and thinly slice the garlic, mix it with the soy sauce, the maple syrup, the citrus juices, the olive oil and the cloves, season with pepper. Cut the chicken wings at the joint, keep the part with the most meat, push the meat along the bone to make small ‘legs’ and put them in a shallow dish. Pour over the marinade and leave to sit for 2 hours. Fry for 15 minutes turning them over several times to caramelize, serve with the reduced marinade.
The wine tasting : Aussieres White, Vin de Pays d’Oc France
100% Chardonnay is a limited production of only a few hectares, with the aim to produce a fresh, delicate wine with harmonious fruity aromas. Located on the coldest part of the vineyard, the parcels are cultivated using modern methods: cover crop between rows to help control vine strength and drip irrigation in order to optimize the ripening of the grapes in a region where summer drought can sometimes cause great damage. Initial aromas of citrus fruits and very persistent on the palate. This extremely lively, very fresh wine is the perfect match for the slightly acid, “citric” aspect of the dish.
